About this coffee
Once the cherries are selectively handpicked, they go into a fermentation process that Sangameshwar developed entirely on their own. The culture is made from raw unrefined jaggery, known locally as Gud, and the fermentation runs for thirty-six hours. It did not arrive fully formed. It came from years of working with what the land gives, observing what works, and slowly making it better. "Formed by land, refined by hands". That is what we believe in, and this coffee is exactly that.
From there, the cherries move to raised beds and dry slowly over twenty-two days, giving the fruit time to draw back gradually and letting what the fermentation started settle into the bean.
The cup opens with orange zest, bright and clean. Mulberry follows in the mid, dark and lightly jammy. Chamomile runs through the aroma and into the finish, soft enough that you catch it only on the second sip. The acidity is bright, the finish gently sweet, trailing into citrus and a faint nuttiness that stays.
