About this coffee

The Classic Washed process is one of the oldest and most honest ways to prepare a coffee for the cup. The cherry is removed at harvest, the mucilage washed clean, and the bean dried with precision. No fermentation influence, no fruit skin adding sweetness after the fact. The result is a cup that reflects exactly where the coffee was grown and how carefully it was handled. For specialty arabica, that kind of transparency is everything.
Attikan Estate sits in the highlands of Karnataka, one of India's most established and respected coffee growing regions. Consistent cloud cover, cool temperatures, and rich soil at elevation create the conditions that specialty arabica needs to develop slowly and with depth. Preheat the brewer and rinse the filter paper with hot water, then discard the rinse water.

Add 18g of medium-fine ground coffee to the brewer.

Start the timer and pour 45g of water for the bloom. Gently swirl to ensure all grounds are saturated.

At 0:35, continue pouring in slow spirals until you reach 150g.

At 1:05, pour steadily to 220g.

At 1:30, finish the final pour to 270g.

Allow the coffee to draw down naturally. Total brew time should finish around 2:15–2:45.
